Their collaboration will bring an exciting culinary experience to both Overton Hotel and Pecan Grill, incorporating signature West Texas flare into every dish.

“I am beyond excited to embark on this culinary adventure in Lubbock. This town holds a special place in my heart, and I am eager to contribute to its thriving food culture,” Chef Coffman expressed.

Coffman brings a wealth of diverse talents to the table, having served as a consultant for over 10 years, contributing to constructing new venues and transforming restaurant concepts. He is also an award-winning winemaker who secured a gold medal at the State Fair of Texas in 1986 for the best amateur wine in Texas.

His talents are not limited to the kitchen. Coffman is a multi-recorded percussionist, having played in numerous live settings and recording sessions, including contributions to various movie soundtracks. He is an avid mountain climber, having conquered 33 of the 54 14,000-foot peaks in Colorado and many challenging peaks in Mexico and South America. In addition to these adventures, he has kayaked from Austin, Texas to the Gulf of Mexico solo.
